I know it sticks to some stainless and not to others, I do not know what makes them different. I do think it is important if you are using an induction cookinf surface. I think the magnetic stainless will heat faster on that kind of surface. I do rmemeber using a glass coffee pot on an induction surface and not realizing that my coffee wasn’t being made after about 10 minutes or more.. OOOPS

The crystal structure that a particular stainless steel cookware will take depends on the exact composition of that steel as well as how the steel is processed. Sometimes you will find a pan which is non magnetic at one point, and mildly magnetic at another. For induction cooking, stainless steel pans are commonly used because they are easy to clean. Then, a magnet must stick very strongly to the base of the cookware, but that is a necessary condition, and not quite sufficient. Some cookware where a magnet sticks will work better than others.
