It’s not the cork that you hit, but the top of the collar of the bottle. And it is not advised to do it with a knife, a machete indeed or a sabre will do. You slide it fast and hard along the side of the bottle and hit the collar, which then breaks nicely and cleanly.

No one really does that often. I have probably done it twice in my life…

I believe what usually happens is that the machete (I doubt a smaller knife will have much effect) breaks the glass neck off the top of the bottle with the cork still in it. If the glass has any defects, this would probably result in the whole bottle exploding.
Just use a corkscrew like normal people!
