There was something about people turning to drug dealing as a way of surviving austerity, and a rise in knife crime linked to drugs trade.

There isn’t. The crime rate in London for a city of that type is very low so a small spike in it shows as a large percentage increase. There has been general slight rise in UK crime rates due to cuts to the police budget. They’re still very low.

They have cut police funding, local councils contribute more towards this since then to try to offset this, but they can’t.
They closed down youth centres all over the country, wich helped the youngsters. They could hang out there, play table tennis, etc. Now they are just hanging out in parking lots unsupervised.
I think this two are the main factors, please note knife crime went up in the whole of UK, not only in London.

But back then there were lots of (unarmed) coppers on ths streets and things would not usually flare up. Sometimes they did though – when the Finchley Boys met the Muswell Hill mob in north London(in early 60s) a young lad was knifed to death.
It is nothing new – we are just more lawless, less well policed, live life too fast and have a bigger cultural mix. And reporting is faster, more detailed and much more ubiquitous.

The interesting thing about people. We use tools to accomplish things more efficiently. If an evil person wants to commit mass murder, they might prefer a gun, but a gun isn’t really their main problem.
A psychopath interested in rapidly involved mass murder might consider the main problem to be, where do I find a lot of defenseless people so I can kill or injure, as quickly as I can? These attacker will pick whatever tool they can get their hands on, to harm as many people as possible, within a short period of time. A psychopath interested in serial murder, has a different problem to solve. How do I go about killing other humans and get away with it? These attacks harm people, but in a much more deliberate manner, over time. Their tool is less likely to be a noisy gun, as it would be a knife or garrott.
A terrorist using serial murder or mass murder, kills for a different reason. They want to strike fear into the population as their main objective. The terrorist reasons, “Give me what I want, and you wont have to be afraid any longer.” These are more likely to use a gun, but cutting instruments like those being used in Edmonton, work just as effectively, if not more.
Why the criminology lesson?
The question is, “Why is London (larger question is gun-ban-societies) having so many knife attacks?” The answer to “why” is simple. It’s a useful tool.
The world will always have these three types of killers. Banning guns isn’t going to stop these people from doing what they do.
