Cast iron pans are great for frying foods with oil (like fried chicken). This requires cooking in an inch or so of oil. They’re also great for cooking bacon which renders a lot of oil from fat. The spout (and two handles on Lodge fry pans) makes it easier and safer to direct the stream when pouring off this oil. The spout also keeps the oil from creating a wide “waterfall” off the edge of the pan which can make a real mess.

Iron skillets have spouts because it makes it easier (and much less messier) to pour out liquids from the pan. The inclusion of the spout is traditional because it is useful.
You need to understand that back in the day the skillet was also used to render fat from bacon and other meats, to be used as frying medium; this requires pouring out the liquid fat, and the spout allows this to be none more neatly and safely.
In more recent times, with iron skillets being used for more than just frying, the spout allows for the pouring of sauces and sauced foods.
You may have noticed that spouts reduce or eliminate the liquids from dribbling down the outside of the pan and make it easier to control the pour.

According to the nice lady that I talked to the spouts are there to make it easier to pour liquids from the heavy pans. That’s all, nothing more.
