Not sure it did. Aluminum came along before teflon but it wasn’t non-stick. Both were much lighter than iron however, and I think that’s what really mattered.
If you have arthritis or weak wrists, it can be hard to handle a big cast iron skillet. And the majority of people cooking at home were women. So lighter pots and pans were a real boon for them. I got my mother’s cast iron because her wrists were in too much pain after she got older.
The problem is that neither aluminum nor Teflon are as good as cast iron for stovetop cooking. And today, there is a ban on bare aluminum cookware in some European states because of the reaction between aluminum and some foods.
So today people are rediscovering cast iron and turning into instant experts on the care and maintenance of it, when it’s the easiest thing in the world to take care of, which is why it can be passed down through generations.
