Well, the first thing to consider is, what do electric carving knives do that regular carving knives don’t? While I have seen people mention that they own and use electric carvers for processing large amounts of meat, the actual answer is ‘nothing’. An electric carving knife does exactly nothing that a properly sharp regular carving knife can’t do. It can also malfunction, it requires electricity, and it is harder to clean, whereas a normal carver just needs infrequent sharpening and occasional strokes on a steel.
It may be easier to use an electric carver if you’re slicing a very large amount of meat, but for the vast majority of home users, that’s not an issue. Electric carving knives aren’t popular because for the vast majority of potential users, they offer additional complexity for no gain. For professionals, restaurant and butcher’s employees, an electric knife is way too flimsy a product; they’re going to use slicers (the big stationary ones with circular blades) or even band saws (particularly if they frequently break down very large sections of animal).
In a nutshell, electric carving knives seem to be a niche product, with a very, very small niche to fill. It’s not surprising that they’re not popular; there’s no reason for them to be popular.

I really don’t know. While I am myself a bit of a knife snob, I won’t use anything but an electric knife for slicing up a ham or a turkey, and they are excellent tools for filleting a large number of freshly caught fish. I suppose it looks more elegant to use a conventional blade at the table.

I don’t know. Perhaps since, in the last several years there has been more interest in quality knives, some would feel that using an electric knife would be kind of a sissy thing.
I have never used one, but from what I’ve seen, they work well.

I have one, I use it infrequently. I use it on large roasts mostly. They work great on turkeys.
As others are pointing out, they are hardly essential. There’s nothing you can do with them that you can’t do with manual knives. But sometimes it’s easier to cut something without needing that back and forth slicing motion. You just press the edge of the blade down and the knife does the job.
If I am slicing a roast, like a Tri-Tip, it’s easier to slice the roast and have all of the slices lined up nice and straight and uniform, which makes for a nicer presentation of the platter. Not that you can’t do it with a manual knife, but it’s just easier with the electric.

Honestly you have a few great answers already, but I will add that I use mine for turkey and roast carving when doing family get together’s.
Otherwise I will just use one of my regular knives
