Then you’ve just set up one heck of a fight.
So, on one hand, we’ve got a mutant clone trooper with an enhanced sense of smell and excellent tracking skills, and on the other hand, we’ve got a skilled Mandalorian bounty hunter.
Personally, I think that Din kicks Hunter’s butt, but for the sake of this answer, we’ll get into it.
Hunter has excellent tracking skills, but those aren’t really useful unless Din tries to run instead of fighting him head on. So it comes down to combat ability, equipment, and the environment in which they fight.
Combat ability. Hunter, while impressive in combat, his main abilities are his enhanced smell and his tracking skills, which aren’t very useful in a straight up fight. I don’t think he’s good enough to outdraw Din in a close quarters gunfight, as shown in his duel against Cad Bane in defense of Omega. Din, on the other hand, is a really fast draw, as shown when he outdraws the Magistrate’s hired mercenary and kills him before he even gets a chance to get a shot off, and when he destroys IG-11 to keep him from killing Grogu. Din also fights and destroys one of Gideon’s Dark Troopers, even though he is overwhelmed against multiple(though it seems like unless your name is Luke Skywalker or Ashoka Tano, then the Dark Troopers would beat nearly anyone), he was able to defeat Moff Gideon one on one, and hold his own against Ashoka. Hunter hasn’t shown anything comparable, so he loses this round.
Equipment: Din wins again. The Mandalorian’s Beskar armor is far and away superior to Hunter’s armor. He also has a jetpack, which means he can take to the sky and gain an advantage because Hunter can’t fly. I don’t think Hunter’s knife will be any good against Beskar, and blaster bolts are just bounced off. Hunter, on the other hand, can be hit by blaster bolts because his armor doesn’t just make them bounce off harmlessly. (Prior to the Razor Crest’s destruction, he also had a lot more weapons, including a disintegrator rifle) and after, he just has a blaster and a beskar spear. Though either can pierce Hunter’s armor.
Environment. This is the one part where Hunter might can win. If the fight happens somewhere Din can’t use his jetpack, and Hunter manages to either shoot or stab Din in his unprotected neck, then he wins. However, if Din can use his jetpack and/or Hunter hits Din’s armor, then the Mandalorian wins.
Din wins 8/10 times due to his jetpack and superior armor, as well as the fact that he is the faster draw. The only two times where he loses are because either he can’t use his jetpack and Hunter stabs or shoots his neck, or he misses and Hunter shoots/stabs his neck.
