Look, I know you want to get SS and I don’t want to discourage you totally, but look into Aus-Ion wrought iron for fry pans. They are lighter than cast iron and if seasoned correctly fairly non stick. They also take a LOT of heat without injury. I just thought I would interject. They are not cheap either, but well worth the cost. I am highly impressed. I have a 10″ fry pan and LOVE IT and may well buy a 12″ when my non stick gives up the ghost as they all do in a year or two.
