I would go with the 18/10 – or 18/8, which is just as good.
The 18 refers, of course, to 18% chromium content, and the other number refers to the percentage of nickel content. 18/0 has no nickel content, which means it won’t keep its silver-like shine over the years.

18/10 refers to the 300 series austenitic stainless steel grade…
18/0 refers to the ferritic or martensitic stainless steel grade.
Corrosion resistance of 18/0 is less than 18/8 or 18/10 grades…
So, unless the specific design allows it, better not to use 18/0 grade…
18/10 is more expensive and that has to be kept in mind…and thus the extra cost has to be justified too…
