This depends on your definition of “cool pocket knives.” Some people like Swiss Army Knives, some like custom knives, some like one-handed clip folders, some like heavy-duty hard use knives, some like traditional folders, some like art knives, etc.
There are various stores, physical and online, that carry different types of pocketknives.
Some larger knife stores will carry a wide range of knives from inexpensive but practical knives to expensive custom knives.

I recommend starting with Kershaw.
Try Cold Steel brand…too.
In many states swithblades are entirely legal, though a quality, study, functional switch blade is expensive.
That is why I recommend Kershaw same function , technically not a swithblade.

I don’t do cool very much. I’ve been EDC carrying a SAK Explorer for something like 40 years, I’m so used to them I have 3 and I got them at various hardware stores. I also EDC a CRKT M21, which is the flipper knife I settled on.. I have a few extras in my sock drawer which I bought on the company website.
why so many?
I’ve lost a few to TSA & holes in pockets.

Check with camping and hiking stores near you. Also, go online and look at Smoky Mountain Knife Works and at Blade HQ. Look for David C. Anderson on youtube. Mr. Anderson always has some great knives and excellent commentaries. He works out of Knife Center.
There are others, but those are my 3 favorites.

Where do you get cool pocket knives?
I’d have thought the primary purpose of a pocket knife was to be useful rather than ‘cool’. The phrase ‘cool knife’ suggests one of those completely ridiculous and utterly useless ‘zombie killer’ wall hanger things, at least to me.
Ridiculous piece of nonsense.
Regardless, my go-to website for all things sharp and pointy here in the UK is Heinnie Haynes . They have some lovely pocket knives, including a convenient page dedicated to UK-legal EDC knives .
That said, for UK-legal multi-tool knives I’m of the opinion that there’s no beating a good old fashioned Victorinox SAK . I carry the Farmer Alox, and it’s never let me down yet.

A cool knife as opposed to what?! First, settle in with a comfortable price point and realize that you get what you pay for. Next, realize “cool’ is entirely subjective and be prepared to expose yourself to a lot of knives. Lower priced “good” knives be Kershaw or CRKT or Byrd. From there it might be Cold Steel or lower end Spyderco. From there it might be ” normal” priced Spyderco or upper end SOG. From there it might be Sandrin or Sebenza. From there??? Well, bring a fat wallet… “Cool’ to me—it’s a functional knife with very good steel and nice flowing lines. I have different sizes and shapes depending on activities of the day. I tend toward Spyderco knives, but have many others. It’s a black home once you start collecting.

No idea……I love pocket knives and I’ve found them on the ground, at antique stores, Amazon, and BladeHQ. I tend to like fairly plain models with good steel, blade geometry, reasonably pocketable, and nice opening action. Some folks like fancy scales and crazy/not functional blade designs. Not my thing.

The Internet, mostly. Amazon, Walmart, Bass Pro all have online offerings. My suggestion is that you not buy a cool knife as much as a useful one. Keep it smallish, because people get funny about that sort of thing. Make sure it locks.

My idea of cool is likely different than yours.
I think a functional, well made, easy to handle knife is cool. No matter what it looks like.
That said there are many, many places to get good solid “cool” knives. Amazon, knife HQ, Home Depot, Walmart and even direct from the manufacturer. I like some of the lesser priced Benchmade brand knives. Crooked mini 2 is a great looking, very functional well, made EDC Knife. Though it is a little bit higher price. I love mine.
