You’re changing your grinding angle from stone to stone. Get an angle guide and you’ll be fine.

Without seeing what you are doing I can’t say. I do know that if you sharpen pulling a blade backwards on a stone it will pull more of a wire edge.
A wire edge happens because the metal is (even very hard metal) flexible enough at the thin edge to bend away from the sharpening grit instead of grinding off properly at the sharpening angle. this means there will be a little sheet of extremely thin steel hanging on the edge of the knife instead of a perfect edge.
Usually you remove the wire edge by stropping the blade backwards on something like leather, a cotton strap, or a bit of cardboard. It has to be able to make that wire edge bend back and forth enough to snap and pull off the actual edge.
Another issue is a coarse stone will leave a rough toothy edge that feels sharp and is great for slicing meat or tomatoes. Moving to a finer stone reduces the toothiness of the edge and leave you with an edge which is smoother and less grabby even though it might actually be sharper. The smoother edge is better for wood working.

It’s hard to say without more details, but it sounds like you have an angle problem. Get an angle guide of some sort. I use a Lansky system; take a look. They’re not hugely expensive.

Maybe but maybe not. Let me explain, its possible you could be doing something when you finish hone that is causing the issue. It could also be the blade itself. My father taught me to sharpen knives with a double sided wet stone by hand when I was about 10. It took a while to learn the the proper angle to hold my wrist. I’ve been sharpening knives for 45 years, I’ve encountered many knives that are a pain in the ass to sharpen. Some, it was the material itself, some the problem was how it was hardened. I have 2 blades that were both given to me as gifts. 1 I tried several different ways and techniques to sharpen it but i could never get it really sharp. The other, the edge would flake off in tiny pieces. My suggestion to you is, try sharpening another knife and see what you get. If it’s the blade, then a different blade will let you know if your sharpening the knife correctly or if maybe your doing something that’s causing the issue. I’m thinking it might be that particular blade.
