National Geographic had a documentary showing how Swiss Army Knives (Victorinox) are made. It showed the blade steel to be DIN X55CrMo14, which specifies a steel with 15% Chromium, 0.5% Molybdenum, 0.52% Carbon, 0.6% Silicon, and 0.45% Manganese. It is roughly equivalent to ANSI 440B, the German work number is 1.4110.

Victorinox uses a martensitic stainless steel alloy for their Swiss Army knife blades. I had a Victorinox for a couple years, but I became disappointed with the quality and durability (or lack thereof). I sold it on Craigslist for a few bucks and bought a Leatherman instead. I carry the Leatherman and a Buck 110 Old Timer folding knife as part of my EDC, so I don’t need to rely on the Leatherman’s knife.

Stainless steel is a phrase that represents many alloys of iron, chromium and carbon with some groups containing nickel.
They are better understood through a study of microstructures and their susceptibility to hardening and tempering processes.
Austenitic, ferritic and duplex stainless steels (that contain a mixture of austenite and ferrite) are soft and can’t be hardened by heat treatment (hardening).
On the other hand, martenisitic stainless steels are capable of being hardened, tempered and thus are best suited for knives, forks etc. that need to preserve their sharp edges for long time…
So, while I have no knowledge of the actual grade of stainless steel used, I can make a good guess – and that would be one of the common grades of martensitic stainless steel.
