The safest all around is Pyrex Glass or ovenproof glass. But ideally it should be cooking specific, if you do microwave…use microwave plastic, ceramic and ovenproof glass. Baking you can use bakewares made from aluminum and ovenproof glass.

They had supplied the grilling pans and grates for the convection use, and a glass sheet for the microwave.. but the flat bottom is all you need, and can’t have the convection oven pans/grates while microwaving.
Convection is like an oven. So anything that can go in an oven.
Microwave is like a microwave and doesn’t like metal anything.
My microwave can be on with convection (combo?) but only with the glass sheet.
Plastics have to be made especially for hot ovens. Then you could use those, but I haven’t seen any. My metal grill has plastic glides, so I know there are plastics that don’t mind the oven… but maybe not for touching food… like bakelite.
