The one in Rebel Without a Cause (1955).
Now, I’ve never been in a knife fight. Never seen a knife fight. Haven’t even really read about knife fights. Only seen them in films, and I acknowledge that those are highly choreographed and glamorized sorts of knife fights. I have no idea how a knife fight is technically supposed to play out, whether stabbing or slashing is the preferred form, how long a man can realistically expect to compete on a level playing field with his opponent after receiving a given number of wounds and losing a given amount of blood, etc.
But I will say that, in context (two 1950s teenagers having a pissing contest in front of girls at Griffith Observatory), Rebel Without a Cause seems to be the most plausible knife fight I’ve ever seen. The two combatants (Jim Stark and Buzz Gunderson) agree, before the fighting begins, “no sticking, just a little jabbing.” Jim and Buzz hardly ever close and grapple with each other, and are very careful not to just charge in slashing or stabbing, leaving themselves open to attack: they just sort of dance and dodge around each other, making the occasional, calculated jab or slash and then leaping out of their opponent’s reach. Your garden-variety street gangster from modern-day Los Angeles would probably call both of them a pair of pansies. (Only he wouldn’t say “pansies.”) And the fight ends, not with a death, but a humiliating defeat after one combatant gets cocky and careless.
That seems pretty realistic to me.

Probably the “The Raid II”, but that was more Karambit used than knives. Segal has a semi decent one too in ‘Under Seige’.

Final scene of a movie called”The Raid”, been a while, but I think it was the part 2 movie. I reality, these knives in the hands of a pro are deadly.
