It’s just a small knife.
think of it like a pen-knife. It is useful for when you need a more delicate cutting tool and the sword would be too big and clumsy to use.
You wouldn’t use a sword to skin a rabbit you just caught, for example. You can use it to cut up food, or to make traps, or to carve wood for whatever purpose. In close combat, a dagger may be a more practical weapon than a sword.
Aragorn travels a lot, mostly alone or with small groups. He spends weeks or months a t a time in the wilderness. A knife is a sort of medieval multi-tool.
Also, back in the dung ages, swords were extremely valuable pieces of equipment, and treated with a great deal of care. A small knife was far less valuable, so using it for tasks that might damage the blade made much more sense.

Having a big knife (or sword) may seem nice, but sometimes you just need a small one for eating or other utilitarian tasks.
