Restore or sharpen? Restoration of a knife takes an expert to analyze the knife and advise the best restoration method. Sharpening videos (many many videos) may be found on youtube but all involve three elements:
Patience. Sharpening a knife takes a considerable amount of patience.
Angle. The knife blade must be sharpened at a consistent angle (usually on both sides of the blade).
Task. A knife being used in the garden (such as a hori-hori) is sharpened different than skinning knife (such as an Ulu).

Better to use a wire brush or an emery wire brush on a circular grinder will take the rust off of it. Spray penetrating oil on it first then it will aid in some rust removal. Best to send it out to get it sharpened if the service uses proper stones to sharpen with. Done correctly with stones provide a better edge than just a ‘v’ edge done quickly. Also a Grind stone is a good sharpener with water as long as the knife is sharpened at the right degrees.

So the best way isn’t the fastest. It’s careful and meticulous craftsmanship. Do it right, and with practice, you’ll get faster, but never fast.

Depending on its condition. If it’s rusted you can use a rust remover prior to sandblasting. Also you may need to remove the handle so you won’t damage it. There are many videos on youTube that show how to restore not only knives but many other things. One of my favorite restorers is a guy from Switzerland. His videos are called My Mechanics restorations. He’s incredible! I highly recommend him.

I have no idea as to what you mean by “restore” since you fail to mention the condition or damage to the knife in question. It may be a matter of simply polishing and sharpening the blade, or it may be a situation where you have so much damage that restoring it really isn’t an option. More information is required.

It all depends on how bad it is but if you need to freshen up the edge there is a sure fire method. Wind down your car window until you have about an inch of glass showing then hone your knife on the top edge, far more efficient than anything you can buy and a lot cheaper

Faster than what ? I have several sets of knives from moderately priced to expensive.
Before I use them they get a pass over the . Once a year I drop them off and get them professionally sharpened.

I usually use those combination sharpeners with a tool steel V on one side and a ceramic V on the other. They do well most of the time. I also give these to friends and family when I give them a knife as a gift.
There are also tool steel sharpeners made of interlocking discs that work well.
I’ve also used the hydraulic strut on a cement mixer and steel tables. One guy here uses the edge of his car window.
These tricks just clean up the edge.
If you get your knife REALLY dull and you shouldn’t in the first place, you will need a whetstone and oil.
If your blade is nicked by very hard use or even electrical arcs, you will need a grinder. Be careful not to overheat the steel.
