X isn’t better than Y if you trained to use Z instead. That’s the long and short of it when it comes to most forms of combat, armed, unarmed, firearm or martial armed.

There are a lot of different types and styles of “knife fighting”, and just like other methods of combat, they were developed by different peoples for use in different circumstances.
You have military combatives which are meant to quickly and efficiently take out sentries or to kill enemy troops in the (very rare) instance of hand-to-hand combat.
There are the very different types of “self defense” knife use where the intent is generally to disable the attacker, rather than kill.
There are all manner of historical “dueling” methods using various types of daggers and other short bladed weapons.
So ideally, you’d have to be a bit more specific. For most modern defense usage, the best overall would be a dagger-type weapon, double-edged, and capable of both cutting a thrusting. A substantial grip, made of non-slip materials, and a substantial guard to protect the hand during hard thrusts.

Problem…. In most states, carrying such a weapon would be flatly illegal and even if legal, pretty damned annoying.
So, most contemporary defensive knife tactics recommend modern “tactical” folders that are strong, concealable, and quick-opening.
Just one example…. There are many dozens on the market.
Specialized designs like the Kerambit require special training and also look very nasty and intimidating and will not go over well if you end up in court.
Using knives for self-defense is VERY problematic due to the legal repercussions. The general public does not look on knives favorably, and in most states you’d be better off to simply carry a firearm.

There’s actually no such thing as “knife-fighting”. In real life, two people very rarely face off, evenly, in a knife “fight”. Short of duels, where weapons are already chosen, and evenly matched, in advance, knife fights, as dramatized in the movies, are very rare.
