That really depends on your price range and what type of knife you want.
My edc which is 2.97 inches is a Benchmade North Fork which can run up to $165
Wanbasion Black Stainless Steel Knife Set, Sharp Kitchen Knife
Any Swiss Army Knife with a blade that length of your choice.
It maintains sharpness longer than most EDC pocket knives used in a similar way, e.g. cutting plastic, packages, lines, fruits, etc., and far far less likely to rust. Mine have never rusted in 30+ years so long as its wiped clean and dry after use in liquids. Avoid using any knife to cut metal except very thin foil such as aluminum or gold, to avoid damaging the edge, but you can do it if you must.
Performance, and durability is consistent over 70 years, from my personal experience and my acquaintances collated together. The steel alloy for blades has been unchanged for over 70 years, X55CrMo14, and is nearly synonymous with SAK blades, the alloys in its tools in pocket knives are also as old; so what your grand father said about a SAK is likely still true today.
Con is that the knife alloy cannot be sharpened to the same razor sharpness as other alloys, such as gourmet kitchen knife alloy, a but at the same time such blades tend to be more brittle and require frequent sharpening to maintain its edge, relative to a SAK. Its a trade off with stainless steel, the SAK blade, versus higher carbon steel.
So the SAK blade is ‘tuned’ for its application, cutting for EDC except metals and shaving body hair.
SAK and at times leathermen multitools, are part of toolkits used in space, at least from the shuttle to the International Space Station. It was used unofficially before that. Given the cost and difficulty of getting supplies in space, high reliability items are a must, and reflects on the reputation of SAK.

That’s a tough question to answer, not knowing you or your habits/needs.
It depends on what you want to spend and it’s intended use. You specify 3″ so I figure you live in one of those socialist hellholes like CA, NJ, NY, etc. I collect knives so some of my knives get pricey…you want something cheap enough that you’re not afraid to damage it in use or lose it, but quality enough to get the job done reliably with good edge and edge retention…I like Kershaw as a “get the job done” knife, unless you’re looking to step up to the big boy class and drop $100+ on a Benchmade, Boker, ZT, etc, which I have but don’t generally carry.
Personally, I rotate my primary EDC knife week to week. This week it’s my Kershaw Launch 6 automatic, I always carry two knives on my person.
Here’s a page full of Kershaws 2–3″ and under $100

I also carry a Leatherman Rebar multi-tool.

You can’t go wrong with the other two answers to your question that I see either, because personal preferences vary, and they’re both right.

I suppose it depends on what you tend to do with it. I carry a Swiss Army Knife every day with a three inch non locking blade. It wouldn’t be terribly useful if I was planning to use it to stealthily take out an elite North Korean special forces squad or engage in a machete fight to the death with ISIS insurgents. But for opening letters and parcels, stripping wires, cutting string and rope, peeling apples, trimming rubber hoses or pvc pipes, trimming obstructions to trails, sharpening pencils and a little light whittling it works out fine. I suppose it all depends on whether or not you’re John Mclaine.

Although I do carry it in a sheath on my belt I could throw it in my pocket. It’s a Buck 110 the blade is 3.5 inches but I just bought my girlfriend a Buck 112 and it is a smaller version of the same knife and you can order them custom made from the factory. If she was here I would post a picture of the 2 together but here is my 110.
