They don’t (to the best of my knowledge) leech any material or flavors into the food they contact, regardless of the acidity or other properties of the food.
They are easy to clean, and it is easy to tell when they are clean (or when they are not).
They aren’t truly “non-stick”, but they aren’t as “sticky” as many other materials.
For baking, roasting, braising? They are perfectly fine vessels. They are also quite safe in a microwave.
Over or under an open flame (such as stovetop boiling, saute or broiling)? Not a good idea at all.
Glass is a poor conductor of heat, but it will (eventually) match the ambient temperature of the oven. Avoid rapid temperature changes. What would warp a metal implement could shatter Pyrex.

I can’t think any benefit other than being able to take the dish from the oven to the table. Pyrex dishes aren’t beautiful but they’re better looking than some of your old cookware with grease burnt onto the sides. Now that I think about it, that’s a benefit as well. Pyrex cookware is easy to clean and doesn’t suffer from carbon build up like metal cookware.
