Tear. The metal in knives can interact with the lettuce and cause it to discolor. At least with iceberg. I cut romaine and that doesn’t seem to affect it

When preparing delicate lettuces for a salad I would tear them. Crispier lettuces like iceberg or Romaine can be cut or torn.

Personally, I think cutting seems more logical, whether taking it off the plant, or preparing it for salads. There is less chance of bruising tender leaves. However, I can’t tell you how many women I’ve heard scold that it isn’t “proper” to cut lettuce leaves, that they should always be torn. And I have to agree that it looks more natural that way. Cutting is faster for sure. That tearing thought may have something to do with this: taking time to prepare something aesthetically pleasing is the polite thing to do.
So, yes, for loose leaf lettuces, I tear, for things like cabbage, I slice. For lettuces growing in the ground, if they snap off easily, I break them off, otherwise use a knife.
Scissors can be an option, too.
As for “should you” – you get to be your own person. There is no wrong or right – there are only opinions.

Depends on the intended purpose of the greens. If you are using in a salad, then tearing is best. However, if the salad is a chopped variety – includes an assortment of chopped items arranged in the bowl with the greens much like a cobb salad – then chopping with a knife works great.
If you are using the greens as a filler in a sandwich wrap, taco, burrito, etc., then chopping or cutting with scissor or knife can be ideal and more uniform in sizing.
