- 2 sweet potatoes or yams, peeled & cut into 1″ cubes
- 3 Tbsp pure maple syrup, more if you want it sweeter
- 1/4 stick butter for filling
- 3 Tbsp. marshmallow fluff
- 1/2 tsp. pumpkin pie spice
- 1/2 tsp. salt, more to taste
- 1 package of wonton wrappers.
- 1 1/2 sticks of butter
- 1/2 c. mini marshmallows
- 1/3 c. chopped pecans
Put the potato cubes into a large pot of boiling water. Cook until they are easy to pierce with a fork. Drain cooked potatoes & put into a food processor, along with all the other filling ingredients. Process until the mixture is smooth. If you feel it needs to be loser either add more syrup (if it use more sweetness or add milk, a little at a time, until the potatoes reach the proper consistency. The filling should be moist, but hold together.
Put some flour on your work space so the ravioli don’t stick to the surface. Take out a few wrappers at time to be filled, they dry out easily. Put 1 teaspoon of filling in the center of a wrapper. With your finger tip, put a small bit of water around the perimeter of the wrapper. Place another wrapper on top of the filling. Press the 2 wrappers so they seal. You can either leave them square or use a 3 inch round cookie cutter. Place them on a sheet with flour or corn meal, to prevent them from sticking.
Bring a large pot of water to a boil. Add the filled ravioli to the water. Be careful not to crowd them in the pot. It’s better to cook them in batches. Boil them for about 3-4 minutes, just to heat through. Strain & add the sauce.
DIVA NOTE** make sure the ravioli is sealed well. They are rather delicate and may break open. Always make a little more than you think you need.
Put the mini marshmallows on a skewer. For a second or 2, put one at a time, over a low flame on a gas range. They burn easily. Place them aside along with the chopped pecans.
Place the butter in a pan on low. Melt it until it starts to brown slightly around the edges. Remove from the heat immediately & pour over the cooked ravioli.
Sprinkle with the mini marshmallows & pecans & serve.
