(Recipe) Latkes w/ Salmon. Creme Fraiche & Caviar

LATKES W/ SALMON, CREME FRAICHE, & CAVIAR
makes approx. 8 (4″ cakes)

  • 1 large white potato, peeled
  • 1 large yam, peeled
  • 1/2 of a medium onion
  • 1/4 c. flour
  • 2 large eggs, beaten
  • 2 tsp. salt
  • pepper to taste
  • veggie oil for frying
  • 8 oz. package of smoked salmon
  • 8 oz. container of creme fraiche or sour cream
  • 1 oz container of caviar or an 8 oz jar or homemade apple sauce

In a food processor shred the potatoes & onion. Place the veggies in a clean dish towel & wring & squeeze the moisture out. Once the veggies seem dry place them in a large bowl & stir together. Add the egg, stir to incorporate & then stir in flour. Once all ingredients are together form 4″ patties. I use an ice cream scoop so the latkes will be uniform in size. I pack them either in the scoop or in my hands to release the excess moisture. Drop the latkes in a pan with hot oil. Don’t crow the pan. I cook 4 at a time. This will ensure a nice crispy outside.


When finished put 1 slice of smoked salmon, a dollop of creme fraiche & a small spoon full of caviar on top of each latke. They can also be served as is with a side of apple sauce.
These also make a great hor’dourve for a party.
