If on the blade, it’s pretty easy. If they’re stainless anyway. Vinegar and bleach will kill and remove mold colonies then a few rounds of soapy water. If on the handle if is wooden, I would recommend removing the wood, cleaning the knife as per the instructions above and replace the wood with new handle material. There are thousands of choices, a quick round on Amazon will yield good results. Then find a tutorial on YouTube and voila, new looking knife.

Soap and water, then polish the metal. If you still have “spots”, it’s a 99% chance you have older knifes with wood handles. I would take a high wood grit, like a 400, and sand them up a little. That should take off any surface gunk. Then oil or seal them well. If it is in the cracks of the wood, or in between the scales and the tang, you will probably need to break down the knife, clean, and reassemble.
If they are cheap, thin knives, and the mold is in deep, I’d opt for new ones. If it is quality steel, it’s always worth refurbishing them.

Mold will wash right off… which tells me you’re probably NOT looking at mold. I’m guessing there’s some sort of oxidation happening there. A good metal polish should take that right off (followed by washing as some polishes are toxic!).
PS – If you’re at all unsure of what you’re doing, then check your local yellow pages for a local knife sharpening service. Even if you have an old set of kitchen knives, it’s usually worth having them professionally sharpened rather than buying new ones. It’s cheaper (usually a couple bucks per blade), and they’ll undoubtedly come back to you sharper than any new blades will ever be!

Metal doesn’t mold, only organic materials do. If the mold is on the metal then simply cleaning it with anti bacterial soap and water to remove it. If the mold is on the handle and the handle is not porous, as in plastic, than do the same making sure to clean out any gaps between the handle and blade. If the handle is porous, as in wooden, then after cleaning the wood should be treated (oiled). If you feel that soap and water is not enough you could use a mild acid such as lemon juice or vinager to further clean the knives.

Mold does not grow on steel! If your knives are that dirty that they have mold on them, you better wash them thoroughly with detergent soap and very hot water to clean them. If you are referring to black spots on a high carbon steel blade, I suggest having them polished and sharpened at the same time by a professional knife sharpening service.
