Notice the main blade has a loop on it, to let you open it with your thumb, or with your other hand. There are many versions of knives with one handed opening features. Some will have a thumb stud on the side of the blade; it serves the same function.
Also there are ‘assisted opening’ knives. These may have a thumb stud, or a tab, or both. Once you open these about a third of the way, a spring inside finishes opening it. This assures that it opens fully, and locks open.
Notice that little tab sticking out the back? Most folks can use that to open the blade. Now these aren’t found on “Swiss Army” brand knives as far as I know. There are other brands of knives and tools that will give you similar options.
Interestingly, “switchblade” knives were originally designed for women, so they could open them easily. You may look at those also. In places like California, switchblades are legal, if the blade is less than 2” long.

Well, it’s a bit hard to advise without seeing how you’re currently doing it, but I’ll have a guess…
The first thing to consider is your technique. Assuming you are right-handed, use your right thumbnail in the nail groove for the blade. Consider cutting your nail short and in a curve, so you have a thin distal band of white about 2mm deep. Try and get this nail up into the groove about 45º to the blade as you pivot it open. This works for little cub scouts and girl guides, so even an adult with small hands should be able to manage.
