I’ve seen and shot bears up close (with rubber bullets from a 12 gauge shotgun and a 30′06 rifle handy just in case.) Unless you’ve seen one move either in fear or anger, you have no idea how fast they can move. They can run for over a mile faster than a human can do for a hundred yards. My advice is to leave the bear alone.
Your chances against a bear with intent to harm you are not good even with a rifle at close range. You might kill it with a lucky shot, but forensic examiners will be trying to figure out if you were born deformed or just ended up that way.
We have black bears where I live and they mostly keep to themselves, but a Grizzly protecting a cub is not something I would want to mess with.
If all you have is a knife, by all means use it, but write your name on the blade with a sharpie. We might be able to identify you by the knife left next to your corpse. Really, your chances against a bear are pretty damn slim with a knife.
