Simple answer: Knife? No problem.
Firearm: Do you have a permit? Yes? Generally OK.
No permit? Hopefully the gun has a trigger lock or is disassembled – to wit, it isn’t a ready-to-use weapon. Even if you got a citation for having a firearm if it was unable to be used then . . . well . . . I cannot consider a District Attorney would push for a trial / conviction.

You need to know the definition of “deadly weapon” in the local jurisdiction.
What makes a knife a “deadly weapon” where you are located? Are there legal penalties for carrying a “concealed deadly weapon”.
Because of the totalitarian and draconian vagaries of some areas I travel to for work; I don’t keep anything that could be construed as a weapon accessible from the driver’s seat.
I do have an emergency kit that contains a knife large enough for processing firewood. That resides inside a bag underneath the back seat. Hopefully that is sufficient to preclude all but the most anal retentive from trying to prosecute.

It is bad idea though since you keep your registration and proof of insurance in there too. If the officer sees a gun, any gun, he is prone to just begin firing his weapon into your body. Keep it in another compartment. Do not mention it. Do not consent to any search. If you have a CCW and are carrying again do not mention it. I know some states say you have to, but that is another way to get yourself killed. Once the officer knows you have a gun, because you told him, you cannot reach for anything and now you are not safe. You are on the razor blade of death. One false move and your kids will be calling someone else daddy.
Do not ever admit to having a firearm. Doing so is deadly dangerous. Glovebox is a bad spot for the aforementioned reasons. That gun gets seen and you can get shot before you even know your in a gunfight. It will not matter who is right or wrong when you are dead.
So far as I have ever seen a police officer has never been in the wrong (as in convicted) for shooting someone with a firearm on or near them. Legal carrier or not. Intent or not.

Depends on the state you’re in. In Kentucky, if a gun or a knife is in a factory made compartment on the vehicle (console, glovebox, etc), then the weapon is not considered concealed. Before I got out of the business, KY was saying that the cutout compartments on car doors (like where you would put a drink or trash at) is not considered concealed.
