The knife shown is a very good knife. The price is relatively common for knives of that quality, with or without the “dimples”. The “dimples” are commonly (but incorrectly) referred to as a “grantons”. Their purpose is to keep sliced food from sticking to the blade and to ease the effort of slicing by reducing surface contact area. The depressions do reduce slicing friction, but do little in regards to keeping sliced vegetables from sticking. Don’t spend the money just for the dimples, but a good knife, if used often and properly cared for, is worth the money.
True Granton edges have the dimples, but they go all the way to the edge rather than stopping a distance above the edge as seen on the Wusthof. Welcome to Granton

No. Those dimples are for marketing. And they make the knife worse than it would be without the dimples, which is usually already pretty bad.
Technically they’re called “cullens,” and are purported to prevent food from sticking to the blade. Last I checked, the only brand of knife that had deep enough cullens to make any difference at all the Japanese brand Glestain. But I wouldn’t buy one of these, either.
If you don’t want food to stick to the blade, you should learn correct cutting techniques. You can also choose blade profiles that are a bit more convex on the front side (the right side on a right-handed knife).
Either is preferable to cullens, which will limit the life of the knife. Eventually, after you’ve sharpened away a few mm of steel, you’ll hit the cullens and won’t be able to sharpen the knife properly anymore.

No.
The “dimples” are supposed to lift sticky foods away from the blade to keep it from sticking. It doesn’t work.
Single beveled knives work better for this. It does tend to push cut pieces away, and it should be obvious why. A potential downsid…
