There are always reasons for doing things when adapting a book to film. The Atreides had a superbly trained military and were becoming a threat to the Emperor. Duke Leto was known as Leto the Just in the Landsraad (kinduv U.N./Congress). Their soldiers always had a moral training and were fanatically devoted to not only to Duke Leto but to House Atreides as a whole. To explain all this would take a lot of time and hurt the pacing of the movie. Villeneuve had a difficult task in adapting the book to the big screen but he did a pretty good job.

It’s a “Hollywood thing”.
Movies tell stories in a visual medium, so the director needs to find some visual method or shorthand to impart ideas to the audience which the author of a book might have many pages or even chapters to do the same thing.
So the arrayed troops chanting the name of the Noble House they belong to is an effective visual shorthand to tell the audience that the troops are loyal to their Duke, especially given the military forces of the other main players (House Harkonnen or the Imperial Sardukar) are not given a similar moment in the movie.
Dune is already a very long and complex novel – transferring it to a visual medium isn’t going to be easy at the best of times, so effective visual shorthand is a great way to compress and speed up the story so it “flows” on screen.
