The reason the word “swordsman” showed up is swords are expensive bits of craftsmanship. You need a specially trained artisan to spend quite a bit of time smelting and smithing exceptional ores, and it is a tool intended specifically for war, or at least fighting. If you can’t read between the lines, this translates to “very expensive.”
Everyone can afford a knife. It takes a blacksmith using leftover scraps only a few minutes, and you will use knives for everything from buttering bread to butchering to cutting peas… Everybody in medieval times carried knives, and often the potential as a weapon was only incidental.
There’s not a special word for it because you don’t invent a special word to describe everybody. Well, other than “human,” anyway.

It depends. If he fights with a knife against someone with a gun, I’d call him a “victim”. If he fights with someone armed with a machete, I’d call him “Slash”.
Successfully taking on an opponent with a knife requires skill and training. You can’t just produce a knife and whip it around like they do in the movies. If you aren’t willing to undergo training, the best way to win a fight with a knife is to produce it before the first blow and hope that deters the opponent. Failing that, I’d produce the knife at the last minute and strike a lethal blow before they realize you have it.
