A trainer is only useful if you plan on the real deal. Which is prohibited in a lot of jurisdictions. And unless you are up to killing people when they enter a 10 feet radius, a knife is utterly useless in selfdefense. Thus far I am with your parents.
As a father, if I had a girl instead of my boy, I would make extra sure that she can break bones before she grew boobs.
So what are we really talking about. As I read this, you want to become more self-confident and be able to defend yourself, presumably because you had an experience you now want to deal with. Surprise: While arming yourself (even just theoretically) can be a solution for the latter (under very special circumstances and only if you are proficient with the weapon of choice), it simply is no magical quick fix for the former.
Practical advice: Talk your parents into a compromise. You give up the knife stuff, and they pay your martial arts classes.
Practical advice for that:
visit every martial arts school within a feasible radius around where you live. Choose the one you feel most comfortable with. However, research the martial arts in question, so that you have basic knowledge of what they are about and how they are organized. I have seen black belts with the 387. dan in an obscure association not being able to show a proper stance. I advice choosing a martial art which includes throws, punches and ground fighting, with kicks being optional (while they look great, imho they reduce your stability more than necessary).
Make extra-double sure that the guys you train with know and understand why you are in. To properly employ any martial art for self defense, you need to be able to continue fighting after you got a hard smash into your face. Or two. The only way to be able to do this is to face this situation. Over and over. You need to be able to continue fighting even when tears roll.(It should be obvious that protection gear is mandatory.)
For fighting practice, always choose the hardest opponent. The guy twice your weight and height. The gal with lighting fast movements. You can loose in the dojo/training hall all you like – as long as it prepares you to survive an actual self-defense situation.
Why do I insist on doing martial arts, and do it the hardest way imaginable? Because that solves both of your problems.

You should respect your parents’ judgement and find something better to do with your time, or at least pick a better knife.
Butterfly knives are about as dangerous to the user as to anyone else, they’re mostly useless for the kind of things you need a knife for (other than looking cool), and they’re not even legal to carry in some places.
For self-defense, you’re better off with pepper spray, as you’re less likely to injure yourself (or a bystander) with it.
If you want to learn to use a knife properly for outdoor skills, ask them for something like the Mora Scout knife , and find a local scouting program or similar to show you how to safely use and carry a knife.
