Not sure what state you’re in, but gun shows and knife shows are great places, because you can actually handle the products. Please do some research about local knife laws. There are plenty of places where certain kinds of knives are illegal.

Can’t help you out with stiletto. There used to be a chain of mall knife shops called Hoffritz Cutlery that carried high-quality Italian stilettos, but they’re long gone. The high quality ones are works of art, but the market is full of junk.
Butterfly knives are a different matter. So “high quality” to me means better production pieces. You could make a whole collection out of just Benchmade knives….

Amazon sells knives, but I try not to buy from that site because you don’t know if you are buying a genuine product or a lower-quality Chinese knockoff.
Online, there are a number of e-tailers, and I’ve brought from several including one in Europe, because I was buying a higher-end mushroom knife for my friend.
Watch reviews on YouTube to get an idea of a knife before you buy.
By the way, knives make poor investments unless you are buying limited-run knives from well-known knife makers.

The best place to buy a quality factory knife is from a reliable dealer. You need to go in and actually handle them in person when you’re first starting out as a collector. You should get a feel for them in your hand and talk to educated sales representatives who are knowledgeable about the product so you may learn about the different brands, steel, and types of knives available in your area.
Seeing a knife online and buying it on aesthetics alone, is a lot different than actually holding one and trying it out when you’re not familiar with the dynamics, range of steel, terminology, and functionality of each model.
You can’t feel the balance and get a sense of its size or shape when you’re simply looking at a two-dimensional picture of a knife online. You can also talk down the price at a store, whereas online the prices are fixed.
So get out there and hold them. Talk shop. Meet your people!
Additionally, there are laws you must follow specific to where you live. A store which carries blades in your area will carry safe merchandise which adheres to the regulations, and keeps you protected from law enforcement. You don’t want to go to jail because you mistakenly ordered the wrong knife over the Internet, and it was discovered by accident during a routine traffic stop.
One thing I’ve learned about people who collect knives; they are overwhelmingly noble, law abiding citizens, who are very good people. Not law-breakers.
It’s nice to uphold the integrity.
In my area, an Italian stiletto would be on the banned list. So I can’t help you there.
It is always fun to join blade forums online. There are literally thousands . I’ve been an administrator for several knife groups for years. You can pick and choose according to taste.
If you’re into “butterfly” knives, for instance, you might search for “Balisong groups” in Facebook and join up.
A public group, Balisong/Butterfly Knives public group might be somewhere to start. I’m not a member of any public knife groups, but the blade community is small , and I’m sure I know members who are in it.
You’ll probably find that your factory blades will be manufactured by CRKT, Kershaw, SOG, KA-BAR, Spyderco, Colt, Morakniv, Solingen, Buck, Ontario, Randall, Benchmade, Remington, Boker, Gerber, Tighe, Roger,Brous, Browning, Smith& Wesson, Bushcraft, Svord, TOPS, and you might even come across some made by my friends, Zoe Crist or Kaila Cummings!
Of course, that’s just a short list.
So much steel to collect and so little time!

While Amazon and such are places you can get high quality knives, if you have a knife store in your area, that would probably be best. The sales people in a knife store are generally knowledgeable about their products and will have quality knives. A good sporting goods store would be another choice.
