  1. Clean them after every single use, every single time. Never use a knife or cutting board you have used for a protein product without sanitizing it immediately afterwards. Cross contamination is a very real risk.
    I run the blade of my knives under very hot water for a few seconds then wipe with a clean cloth. The cutting board will hold more contaminant than I knife so hot water for a couple of minutes and a good scrub.
