The “enamel” you see on cookware is not paint — it is a layer vitrified glass or porcelain. A slurry is sprayed onto the coookware, during manufacturing, and the cookware is baked (or fired) in an oven to convert the slurry into a tough coating. Care is taken to choose materials that have similar coefficient of heat expansion — because unlike paint film, which is elastic, the vitreous coating is quite rigid, and may chip or crack if not handled properly.
