Diamond is far too brittle to be used as a good material for knives. It might be able to be sharpened to scalpel-level sharpness, but if you weren’t extremely careful with it, it would probably chip and break very quickly. Even a task like opening letters could put too much strain across the blade and cause the edge to chip off.

So if you could so if you could create one that size, and then you could find a way to sharpen it, it would shatter upon use. The blade May hold its Edge for a long time if you could keep from chipping or breaking it.

Diamonds are very hard, but they are very brittle. Diamond crystals are full of cleavage planes and the old way of cutting diamonds was to split them with a hammer and chisel. A badly directed blow would cause the diamond to split in an uncontrolled way and the diamond would fly apart into many small fragments. Faceting diamonds by grinding them against other diamonds is from about the 16th century, relatively recent.
