18/8 and 18/ 10 means 18% Chromium and 8 or 10% nickel 304 means AISI OR SAE 304 And having 18% Chromium and 8 to 10% nickel, all are same and suitable for cookware, 10% nickel will have better ferrous factor

18/8 and 18/10 is very good and only vary by the small amount of nickle(the second number) in the alloy. At that level is is more about the design of the pan than the material. You want pans with thick bottoms and handles that are comfortable and well attached.
304 grade is just another way of saying 18/18 and 18/10. A home cook is not going to notice the difference in metallurgy.
