They’re less than optimal! They may protect against slashes and mild punctures from one-handed knife operations by you. But a dedicated attacker is cutting them apart. With your flesh behind them. The fact they can take the worst off helps but your hands will cook in those gloves, While unable to do simple tasks due to the thickness and bulk. Like, wearing a construction glove really just tighter fitting.
A humour I find with this gear is that they literally take a construction glove and fit a few moulded polypropylene pieces upon certain areas and adding a way to snug the glove down better then rename it; Anti-stabbing, Stab resistant, My personal favourite Stab-Proof . Yeah, the only way to be proofed is by taking a spear, pike or Halberd thrust and the material withstanding its full impact. Without passing traumatic damage into the body part in question.

They don’t work very well for self defense purposes, however. After all, I can’t imagine someone walking around all day wearing them.
