There is a plethora of ways to sharpen your tools from electric powered stones to whet stones but I just sharpen my carving knives with some sandpaper.

I take something like 320 sandpaper and work my way down… the finer the grid, the sharper it gets. I do this about twice a year. All the other times, after a few uses, I strop my tools with a leather strop and some compound. It helps with maintaining a razor sharp edge and doesn’t take a lot of steel off, so it saves your tool in the long run.
Leather strop and compound
Just remember that with a strop as well as with sandpaper you put your tool bevel flat on it and the slide it along away from the bevel. Otherwise you’ll cut into your strop or sandpaper.

Carving with a dull knife can be dangerous. That’s why you need to know how to make your knives incredibly sharp.
You need:
1) A dull knife
2) Stropping Kit
3) Polishing compound
Step 1:
Rub a thick layer of a polishing compound into the rough side of the leather strop. Don’t use strong pressure on a polishing compound. Just imagine that you color your leather strop with green paint, covering it back and forth.
Step 2:
Lay the knife flat against the leather strop and pull it away from the cutting edge with long strokes. Then repeat on another side. For a new knife or for a knife with little damage, 10-15 strokes per side should be enough.
Note! Be careful and wear cutting gloves because it’s not easy to sharpen a knife and it requires practice. If you use it not carefully, you might get hurt.
Step3:
Turn over the leather strop and pull it away from the cutting edge with long strokes, work the knife across the smooth side of the leather. This allows you to polish the blade and give it a great shine.
Step 4:
Check how your knife is sharpened. If you can slice paper effortlessly with your knife and it doesn’t catch and tear then your knife is reasonably sharp and ready to work.
