First, use a sharp knife. Depending your preference, either a Japanese style cleaver or a French chef’s knife will work. Sharp knives are always safer than dull ones.
Peel the sweet potato, cut a thin slice from one side so it won’t roll on the cutting board, then cut it lengthwise it into planks, cut the planks lengthwise into strips, then cut the sttips crosswise into dice. Remember to curl your fingers under instead of splaying them on the surface of the vegetables. A proper grip keeps you much safer.
Don’t try to dice hard vegetables with unsuitable knives, it’s asking for trouble.

It may seem counterintuitive, but it helps to start with a really sharp knife and a cutting board. A sharp knife will help keep the blade from slipping, thereby not slipping into your finger (with a dull edge which is actually a more painful cut than with a sharp blade anyway).
But let’s try not to have any cut of the fingers, whether by dull or sharp edge!
My best method is to peel the sweet potato with a veggie peeler first. Then I lay it on its most stable side on the cutting board so that once I start cutting it, it’s not going to wobble or fly across the workspace. If there’s no stable side, just cut a small area off the bottom lengthwise to help it sit flatter.
Smaller areas of cutting are easier to manage than long slices, so I usually cut in rounds, once you have the rounds you can cut those into quarters or whatever size you need.
This can be done with a paring knife but I find a larger blade works better because you’ll have more leverage. If you want to get really hardcore, you can even use a cleaver! But the main things you need are a stable potato and a nice, sharp knife on a cutting board.

First I keep my knives extremely sharp. This may seem counter-intuitive but a sharp knife cuts in the direction you want it to with much less effort, a dull knife has to be forced and when it goes off in some other direction is when you are most likely to cut yourself. Second, if you cut one flat side on the sweet potato and lay that flat on your cutting board it will be easier to hold it still while cutting planks from it. Third, when you reach the point, maybe 2/3 of the way, where it is getting harder to handle, lay the larger flat side flat and work from there. From that point it is easy. Cut the planks into sticks and the sticks into dice. I would recommend looking for a video tutorial on knife skills on youtube if you are not sure of your skills and particularly how to use a knife safely

I use a mandolin. Now I HAVE cut myself many times on the mandolin which is monstrously sharp. We’ve nicknamed it The Mandolin of Blood. (A very witty friend of mine when I told her this asked me if I was preparing finger food.)
After a while you learn how to grip the potato so you don’t come into contact with the blade and comb.
