Do yourself a favour, get a drywall saw for $5, then…
Using a speed square, draw a square where you need to cut out. Then draw another square at an angle to that one. Think the Star of David with squares. And cut out the middle with your drywall saw… or continually cut lines with your utility knife?
Edit: to further explain why the squares… circles are very hard to free hand draw. If you don’t cut a decent circle, the cut out could be a pain in the ass to put back like a puzzle piece, or if installing a light etc over it ensures that the hole isn’t oblong that it would poke out from the perfect circle that the light fixture is. Hope this helps clarify.

You score the finished side (side to side or end to end) using a straight edge for a guide, (mill finished edge if wood or metal ruler) several times. Turn the sheet over or up on edge, fold the sheet away from the cut using the straight edge, if your scoring was not deep, for a fold guide.
Then take the knife and cut the paper backing while the two pieces form an angle of 90 degrees or more. The knife will follow the fold.
If your cut is for a mid-sheet fitting around a utility outlet, or other, carefully measure and mark, vertically and horizontally, to make an outline of the piece to be excised. Using a drill with a bit of no larger than 1/4”, carefully drill a hole at each corner. Draw the shape while horizontal if a knife is to be used. Repeat as above.
If a small tipped saw is to be used, start with the saw by inserting through the hole and saw through on the line scribed on the sheet. Initial lines and cuts are all to be made from the finished side. Be nice to the tape and mud man.
