A true Granton edge has dimples that go all the way to the edge But, the edge is still flat and not indented/wavy like a serrated edge, so it can be sharpened as you would a regular fine edge. The Granton depressions will be sharpened with a chisel edge from the opposite side – the depressions are staggered side to side. Honing with a steel or ceramic rod is still very effective.

Mr. Regan’s answer is the way to do it. But for a knife used for ordinary cooking I find the Zwilling (two brothers brand) 2-Stage Manual Knife Sharpening works very well. It comes with sharpeners for both Western and Asian knive which have both coarse and fine sharpeners making four in all. Each pair has sharpens and polishing the appropriate kind of knife. They maintain the knife geometry. I got mine on sale at Costco for less than $US 20.

The same way as any other knife. But you’ll quickly find out granton edges are useless and sharpening feels slightly different once the edge reaches the dimples. It also turns the knife quite ugly.

Hi Nelson. A Granton edged knife actually has a normal, fine edge. The term Granton edge is misleading, it actually refers to those dimples on the sides. The dimples are supposed to help release sticky, moist, or otherwise clingy foods from the knife blades sides. You can maintain this edge just like any other non-serrated knife edge. In fact, you do not have to worry about the “Granton” part at all. However, if you ARE cutting clingy foods, you may find it useful to wipe the knife periodically with cooking oil on a paper towel, if it will not harm the foods used. This just helps keep sticky foods from attaching to the knife. Alternately you could use butter, lard, or whatever is appropriate to the cleanliness, sanitation, and flavor of the food being cut. If food stickiness is not your issue, just use away, and do not worry about it at all 🙂
