First off, don’t be tempted to go overboard and buy something really expensive. There are a lot of very sexy knives out there at premium prices. Decide on the price range that suits your pocketbook before you walk into the kitchen supply store, and stick to it.
You can get a decent starter knife from a reputable company for about $60 – $70 bucks. The best way to choose a knife is to try a few out, and see how they feel in your hand. Some people like a bolster that protects their fingers from the back of the blade, some prefer a slimmer handle. Even if all you are looking at are classic French chef’s knives, different companies make blades with different shapes. You may find you prefer one shape over another, based on the way you handle the knife. There isn’t really one that is better than the others, it’s down to individual preference.
What you want is something that feels comfortable in your hand, that is balanced, so you don’t get tired using it for a couple of hours, and suits your pocketbook. You don’t need to spend a fortune to get a decent knife made with good steel that will take and keep an edge, and you can always upgrade if you decide you want something better down the line.

Try them out. Go to your friends’ houses and use theirs, or if there’s a cooking class in your area call and ask if they have knives you can try out if you sign up. Mainly it’s not a big deal. Anything from 7″ to 10″ long will do 99% of what a chef knife should. I prefer a santoku style myself, but a classic european chef knife is also a fine choice. Just find something from a reputable maker that fits your hand well. Don’t try to save too much money by buying some new “wonder knife” on TV. A quality maker can be important. The reason I say this is because a couple years ago, when the scales (handle material) on my Wusthof started to crack, I sent it back to them with a note explaining I’d always hand washed it and this shouldn’t happen. They sent me a new one and an apology. A quality knife from an established and respected company will probably be cheaper in the long run.
