It is possible with pretty much any plain edged knife if you get it sharp enough – but this is likely to be quite harsh on the skin. I’ve tested edges on knives I sharpen on my arm or leg hair many many times but rarely try to use one on my face because even if the blade is sharp enough, the razor burn is likely to be significant.
Almost nobody actually does this due to the poor shave quality (many knives have a wider edge angle that does not lend itself to an effective shave), and those that have mostly were either experimenting (usually only once!) or trying to emulate something they saw in a movie or on TV. A straight razor is a better option – I would think a thin kitchen knife with a fine edge would be better than most other non-shaving-designed blades, but I still wouldn’t expect it to perform as well as a razor.

Of course you can. It won’t be nothing nice, though. If you look at a knife edge closely you will see a thin strip of steel right at the edge where the sharpening process actually grinds steel away from the blade on both sides. This is the bevel. The two bevel faces are like the two sides of an isoceles triangle, and the very edge is the apex. The two bevel planes must intersect in steel to have a sharp edge.
Now envision this isoceles triangle again. The angle of the apex is the bevel angle. With knives it is common to use only half of that angle in describing an edge. With straight razors, we use the whole angle, or “included angle” in conversation. Either way, the bevel angle is one of the most important characteristics of an edge. A more obtuse, or greater angle, gives an edge that is very tough and durable but does not cut as easily as a blade with a smaller, or more acute, bevel angle. However the more acute bevel angle is more fragile, and more difficult to manage while honing. A typical knife might have a bevel angle of 20 degrees. A straight razor, which is actually designed for shaving, will have a bevel angle usually of around 16 or 17 degrees included. That is a tremendous difference. The straight razor when expertly honed is as sharp as a double edge razor blade, and I have made edges noticeably sharper than all but the very sharpest double edge blades. This simply can’t be done with the usual bevel angle set on a knife edge.
Not every steel will support such an acute bevel angle, and the heat treating and tempering (two separate operations) have a lot to do with what sort of edge the steel can support, too. Not every knife is even made of steel suitable for such an acute bevel.
Another characteristic of an edge is how refined and polished it is. When the bevel is set, the edge is formed. This is done on a relatively coarse stone or lapping film, typically 600 or 1000 grit. Every edge will be toothy and obviously so when you look at it with sufficient magnification. Every bevel face will be scratched at the same level of magnification. Subsequent stages of honing with more and more finer abrasive grits refine that edge and that bevel. Each stage must totally eliminate the scratches made by the previous stage, replacing it with its own finer ones. This also incidentally reduces the height of teeth and chips in the edge. Typically the progression used in honing a straight razor goes up to 12k grit.
Another relevant characteristic of an edge is the flatness of the bevel. The true bevel is of course a plane. The physical bevel actually on the blade might not be a flat plane. With freehand sharpening, it will actually be somewhat convex, because the human hand and eye can only keep the honing angle the same with limited accuracy and consistency. The grind geometry of a straight razor is different than that of most fixed or folding knives. That being said, any sharp, straight blade can be used to shave. I wouldn’t do it, simply because shaving with a straight razor give me the willies, so if I wouldn’t do it with a purpose-built tool, I’m certainly not going to do it with a hunting or tactical knife.

You could shave hair with any knife if you somehow manage to file the edge to that degree of sharpness. I have a little 10-dollar knife made of 8cr13 that shaves hair. The main problem with lower-end steels is that they’re harder to sharpen and the edge retention is less-than-optimal.

Sure can! Granted you’ll probably only want to do it once since it isn’t a pleasant experience. High hollow grinds work better than just about anything else, you’ll also want a thin edge angle and a polished edge. I’d also recommend rubbing some olive oil or similar on your face as a pre-shave to help with preventing nicks. It’s certainly do-able but razors were invented for a reason.

The shape of the knife and the profile of it’s edge must be taken into account. It’s very hard to put a “shaving-sharp” edge on many kinds of blades due to the thickness of the blade and the profile of the grind.
Most straight razors are “hollow ground”, which provides a good sharpening angle but one that’s not very durable…. They are not intended for general cutting.

Spose the easiest answer is a knife that resembles a straight edge. I would venture a thin blade of around 5″, and probably a carbon steel blade (not stainless). They are easier to attain a super fine edge. A quite acute angle, likely with no secondary bevel, sharpen thro about 6000 grit stone, and finish with a proper leather strop. If you start now, you might be able to shave for summer. Good luck!

I’ve done this twice with new knives, both times with maybe a two week growth of beard.
The first time was with a Cold Steel Kobun in 1999. I was only able to shave half my face before the blade was too dull to shave. It was still sharp enough for normal use, but not sharp enough for facial hair.
Then a few years ago I tried this with a new Spyderco Byrd Cara Cara with a plain edge. I was able to shave my entire beard off but only once. While it was still vary sharp, it was not sharp enough to shave.

Almost any decent quality knife will do. After you get the knife the as sharp as you can with a good quality whetstone, you must strop it with leather strap like you used to see in the barbershops. Then, if you did a good job, you can shave with it.
