I typically use Teflon-coated aluminum or Teflon-coated stainless steel, so I don’t pick either of your options as a first choice. Why? I like the non-stick performance of Teflon and I know that polyfluoroalkyl substances aren’t found in modern Teflon, so I’m not worried about the safety.
The reasons I don’t use either of your two options are:
I do not like bare stainless steel because I could get pure water to burn and stick to it.
I don’t mind hard anodized aluminum, but I’ve only got one or two of those while I’ve got a coherent, coordinated set of Teflon-coated aluminum cookware.
