CHOCOLATE-PUMPKIN BLACK BOTTOM MINI CUPCAKES
makes 24 minis
CUPCAKE
- 3/4 c. flour
- 1/2 c. sugar
- 2 Tbsp. cocoa powder
- 1/2 tsp. baking soda
- 1/2 c. water
- 1 Tbsp. oil
- 1/2 tsp. vinegar
- 1/2 tsp. vanilla
- 1/2 tsp ground cinnamon
Preheat oven to 350F degrees
Put all the ingredients in a mixing bowl & mix until incorporated. Set aside.

FILLING
- 8 oz. cream cheese, room temperature
- 3 Tbsp. pumpkin puree
- 1/3 c. sugar
- 1 egg
- 1/8 tsp. salt
- 1/8 tsp. nutmeg
- 1/8 tsp. ground cloves
- 1/4 tsp. ground cinnamon
Put all ingredients in a food processor. Mix until smooth.
Put liners in mini cupcake pans. Put about 1 tablespoon of chocolate cake mixture in each liner. Put a Tablespoon of pumpkin mixture on top of the chocolate. Bake for approx. 20 min. or until a tooth pick comes out clean. Cool
