  2. Magnetism isn’t the problem. Iron content is. Induction burners work by.. INDUCTION. Meaning that an electic current is created in the pot via a copper coil under the surface of the burner and it’s the iron in the pot that resists that current that causes the pot to heat up. Copper and aluminum are good conductors of electricity and have very little electrical resistance, so don’t work well on induction cooktops. Cast iron and stainless steel pots work beautifully.
    You can “cheat” and place an iron/steel based disc on your cooktop that WILL heat up and then place your non-iron-based pots and pans on top of that disc to cook in them if you really don’t want to replace a copper, aluminum or other non iron-based pan but it will not heat up as quickly or as efficiently.

    All these will be less than $1000. There will be some advantages: The cook-top is easy to clean. Water will boil faster. Notwithstanding I prefer gas. It is easier to control.

  4. It has nothing to do with how old your cookware is, it depends on the material that it’s made from. It should also have a flat bottom for best performance. If it’s warped or wobbly, it’s not going to work well.
    If your cookware is stainless steel, you should be fine. If it’s aluminum, it’s not going to work unless it has a stainless steel disk on the bottom.
    If a magnet sticks to the bottom of your cookware, it’s probably fine. If a magnet doesn’t stick, you’re going to need to go shopping. There’s absolutely nothing you can do to your aluminum cookware that will make a magnet stick to it.
