It depends on the knife. Some Japanese ‘handed’ knives are flat (or a bit concave) on one side and beveled on the opposite side (like on a chisel or plane). These will be pretty hard to convert, and you should just start out with the manufacturer’s left handed version. The concavity means food on your ‘handed’ side falls away from your knife as you cut. Way, way better than a Granton relief
Contra-wise, there are some Japanese knives that have a ‘handed’ edge (one side steeper than the other), like the knives by MAC. Those are pretty straightforward to re-sharpen with a bias the other way- or to make symmetrical (same angle on both sides).

If so, this isn’t even a big deal. Just sharpen the knife when it gets dull, and over a year, or so, you’ll get the edge that you want. This isn’t unlike getting to know the edge on any other blade. The edge will mimic a 50/50 western edge, and before you know it, you’ll have your left handed blade.
