Not really. It is a matter of blade thickness. To be certain there are some extremely sharp knives. However, while a knife might be honed to a thin enough edge to rival the edge of a razor blade or scalpel, doing so would create a knife edge far to fine for practical utilitarian purposes The resulting blade itself becomes thinner and more delicate.
There are utility knives, often called “Razor Knives”; but these are little more than a heavier razor blade in a robust handle. These are made for relatively light but more precise cutting through lighter materials. Likewise for craft knives, e.g. X-acto, which like Utility knives are made for even lighter, more precise cutting (see Scalpels). But to be certain, these are not made for the kind of work nor rougher handling as are proper knives.

As previously posted, it does rely on the thickness of the blade and bevel. However, with ‘proper’ sharpening and honing you can achieve a razor sharp edge that will make a paper thin slice of tomato,, or shave the hair off pig skin. Most people don’t know how to sharpen a knife (honing steels don’t sharpen,) or, don’t handle their knives properly. Can you accomplish the delicate, minute, precise work of an X-Acto knife! No. Can an XActo knife carve a roast! No. Each tool has its task(s.) Be Good.🙂
