yes, a sharper knife is safer than a less sharp knife> This is the case for ALL knives, not just a paring knife.
That being said, a paring knife does NOT need to be the same hardness rating as many other knife shapes/models. A paring knife has MUCH less contact on the board than almost all other models and as such does not dull as quickly if used properly.
