CHOPPED ANTIPASTO SALAD
serves 4

1 head of romaine heart lettuce, washed, trimmed & cut onto bite size pieces
1/2 c. salami, cut into 1/2 inch cubes
1/2 c. cheese, cut into 1/2 inch cubes (fontina, mozzarella or provolone)
1/4 c. caper berries
1/4 c sundried tomatoes, packed in oil, chopped
1/2 c. roasted red peppers, chopped
1/2 c. pepperoncini (sm. green jarred peppers)
1/2 c. artichoke hearts, chopped (jarred)
1/3 c. black oil cured olives or black olives, pitted
1/2 c. green sicilian olives, pitted
1 Tbsp. parsley leaves, finely chopped

Put all the ingredients in a large bowl & toss. I serve it with a simple dressing of extra virgin olive oil & red wine vinegar.
