AUTUMN RICE SALAD

serves approx. 4

2 cups cooked brown rice (or your choice)
1/4 cup pistachios, rough chop
1/4 cup walnuts, rough cop
1/2 cup diced apple, about 1/2 inch pieces
1/4 cup pomegranate seeds
1 Tbsp mint, chopped
1/2 tsp course salt

Cook rice according to package. stir in the rest of the ingredients. Add the vinaigrette a little at a time until it suits your taste. Put the dressing on right before serving.

POMEGRANATE VINAIGRETTE

3 Tbsp olive oil
2 Tbsp. pomegranate molasses or vinegar
1/2 tsp lemon juice
